Ingredients

  • 6 6-inch bamboo or wooden skewers

  • 1 pound salmon (sometimes easier to purchase in fillets 2-3)

  • 1 tbsp. zucchini cut into ¼ ribbons

  • 1 yellow squash cut into ¼ inch ribbons

  • 1 small red onion, cut into 1-inch squares

Preparation

  1. Preheat oven to 350 degrees.

  2. Toss prepared fish in a medium mixing bowl with dill and ¾ of the citrus splash. Let marinade for 20- 30 minutes.

  3. Thread 1 piece of fish on stick then add/thread on zucchini slice ”ribbon” another slice of fish, repeat with yellow squash “ribbon” and another piece of salmon.

  4. Place salmon sticks on prepared baking sheet lined with a piece of parchment paper, non-stick spray or a brush of oil. Sprinkle with a pinch of sea salt

  5. Bake in oven for 10-12 minutes until flesh is white.

  6. Serve with reserved citrus splash or drizzle a few tablespoons on serving plate over salmon.

  7. Garnish serving platter with slices of citrus, if desired.
